Healthy Chocolate Bark
Healthy chocolate base: 
8 tbsp coconut oil (cold-pressed not expeller pressed) 
8 tbsp cacao (sifted) 
6 tsp maple syrup or rice syrup 
pinch of pink salt

Gently heat the coconut oil in a dry bowl sitting in a second bowl of boiling water or thermomix.
2. Add the cacao, maple / rice syrup and salt and stir until completely smooth.
3. Add small capful of peppermint oil
4. Pour mixture out on a tray lined with baking paper.
1. Making sure evenly spread and not too thick/thin, you want about 5mm roughly.
5. On top add remaining ingredients. 
6. Pop into fridge or freezer depending how quick you want it!

Remember, as coconut oil will melt at 24C you’re best to eat quickly! Otherwise, consider adding some almond or coconut meal to help hold the bark together if it’s left out for a while. It will still melt but just not quite so quickly.
